A delicious and easy meal that combines juicy chicken legs with crispy roasted carrots, Parmesan cheese, and aromatic herbs. Perfect for a family dinner or a special meal.
Chicken Legs
Marinade Ingredients :
- 8 chicken legs
- 4–5 tbsp MYST Extra Virgin Olive Oil
- 2 tsp paprika
- ¼ tsp freshly ground black pepper
- 1 tsp MYST Organic Thyme
- 2 tsp salt
- 1 tsp MYST Organic Oregano
- 3 garlic cloves, minced

Directions :
- Rinse the chicken legs and pat them dry with paper towels.
- Place them in a large resealable food bag.
- In a bowl, combine the MYST Extra Virgin Olive Oil, paprika, black pepper, thyme, salt, oregano, and minced garlic until well mixed. Pour the marinade over the chicken, seal the bag while removing as much air as possible, and massage gently so all the chicken legs are evenly coated.
- Refrigerate the chicken and marinate for 2 hours.
- Before cooking, let the chicken rest at room temperature for about 20 minutes.
- Preheat the oven to 200°C. Bake the chicken legs at 220°C for 20–25 minutes.
- Turn the chicken legs over and bake for another 10 minutes, until golden brown and fully cooked.

Parmesan Roasted Carrots
Ingredients :
- 4–5 carrots, sliced
- 4–5 tbsp MYST Extra Virgin Olive Oil
- 4 garlic cloves, minced
- 3 tbsp grated Parmesan cheese
- 3–5 tsp breadcrumbs
- ¾ tsp salt
- ¾ tsp freshly ground black pepper

Directions :
- Preheat the oven to 200°C and line a baking tray with baking paper or aluminum foil.
- Place the MYST Extra Virgin Olive Oil, garlic, breadcrumbs, salt, and pepper into a large resealable bag.
- Add the carrots and shake well until evenly coated.
- Arrange the carrots in a single layer on the baking tray.
- Drizzle with a little more MYST Extra Virgin Olive Oil and sprinkle with grated Parmesan.
- Bake for about 20 minutes, until the carrots are tender and lightly golden.
- Serve immediately, garnished with freshly chopped parsley if desired.
