The Art of Production

The journey of MYST® begins in late October, when the early harvest season starts. Depending on the desired flavour profile, olives may be harvested at different stages of ripeness. We choose early harvesting, while the olives are still green, to highlight the fresh, fruity, and pleasantly peppery character of our extra virgin olive oil.

Although the oil yield is lower at this stage, this approach results in an extra virgin olive oil with vibrant aromas, balanced flavour, and distinctive character.

HARVEST & COLD-PRESSED EXTRACTION

Our olives are carefully handpicked and transported in crates to preserve their excellent condition until processing. They are cold extracted within 8–12 hours of harvesting, helping to maintain the freshness and natural characteristics of the fruit.

The extraction takes place in a modern two-phase olive mill, where the temperature never exceeds 27°C, in accordance with cold extraction standards. The result is an extra virgin olive oil with fresh aromas, balanced flavour, and exceptional character.

Before bottling, the olive oil is stored for a short period in stainless steel tanks, allowing natural settling under carefully controlled conditions before it reaches your table.

GOLD AS A FOOD SUPPLEMENT

The MYST Gold contains 24-karat edible gold flakes (E175), adding a distinctive and luxurious appearance to the olive oil. Edible gold is used exclusively as a decorative ingredient and is an approved food additive under European legislation.

Our olives are traditionally prepared through a slow and natural curing process that respects the fruit and highlights its authentic Mediterranean character. Each batch matures gradually in natural brine with fresh lemon, extra virgin olive oil, and wild oregano, without artificial debittering or unnecessary intervention in the traditional production process.

The slow curing process helps develop the olives' distinctive flavour, rich aroma, and pleasant texture, creating an authentic product inspired by Mediterranean tradition.

Available both whole and pitted, our olives are suitable for every culinary occasion. Perfect for salads, appetisers, cooking, or as a delicious accompaniment to any meal, they bring the authentic taste of Greece to your table.
