Beef Quesadillas with Guacamole Sauce

Enjoy delicious quesadillas filled with seasoned ground beef and plenty of melted cheese. Serve them with crispy nacho chips and creamy homemade guacamole for a meal everyone will ask for again and again.

For the Guacamole :

Guacamole is very easy to prepare. Simply place all the ingredients in a blender. For best results, roughly chop the ingredients first so they blend more easily.

  • 2 small avocados
  • Juice of ½ lime
  • 1 small red onion
  • 1 red chili pepper
  • ¼ cup fresh parsley
  • 1 cherry tomato
  • 1 tbsp MYST Extra Virgin Olive Oil
  • 1 tsp salt
  • 1 tsp freshly ground black pepper

Blend until smooth and creamy, then refrigerate until ready to serve.

Refrigerate until ready to use.

For the Quesadillas

  • 3 tbsp MYST Extra Virgin Olive Oil
  • 1 small red onion, finely chopped
  • 500 g lean ground beef
  • ½ cup tomato sauce
  • 1 tsp salt
  • 1 tsp freshly ground black pepper
  • 8 flour tortillas
  • 1 cup shredded cheese
  • 12 tbsp sweet corn

Directions

Step 1: Prepare the Beef Filling

Heat 3 tablespoons of MYST Extra Virgin Olive Oil in a large non-stick frying pan. Sauté the chopped red onion for about 2 minutes.

Add the ground beef and cook for 6–8 minutes, stirring continuously with a wooden spoon to break up the meat until it is evenly browned.

Add the tomato sauce, salt, and black pepper, then continue cooking for another 2–4 minutes.

Transfer the beef mixture to a bowl and set aside.

Step 2: Prepare the Quesadillas

Heat a large non-stick frying pan over medium-low heat.

Place one tortilla in the pan and add:

  • ¼ cup shredded cheese
  • ¼ of the beef mixture
  • 3 tbsp sweet corn

Top with a second tortilla and cook for 1–2 minutes, until the bottom is golden brown.

Carefully flip the quesadilla and cook for another 1–2 minutes, until the cheese has melted and the other side is golden brown.

Repeat the same process with the remaining tortillas.
