The journey of MYST\u00ae<\/strong> begins in late October, when the early harvest season starts. Depending on the desired flavour profile, olives may be harvested at different stages of ripeness. We choose early harvesting, while the olives are still green, to highlight the fresh, fruity, and pleasantly peppery character of our extra virgin olive oil.<\/p>

Our olives are carefully handpicked and transported in crates to preserve their excellent condition until processing. They are cold extracted within 8\u201312 hours<\/strong> of harvesting, helping to maintain the freshness and natural characteristics of the fruit.<\/p>

The extraction takes place in a modern two-phase olive mill, where the temperature never exceeds 27\u00b0C<\/strong>, in accordance with cold extraction standards. The result is an extra virgin olive oil with fresh aromas, balanced flavour, and exceptional character.<\/p>

Before bottling, the olive oil is stored for a short period in stainless steel tanks, allowing natural settling under carefully controlled conditions before it reaches your table.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t
